In 2018, we took our passion for cooking, education through food, & serving the community & launched our company, Barrel & Swine, LLC. What began with an open-kitchen/pop-up tent concept, then evolved into Maillard Wood Fired Kitchen which includes catering services & two custom-built food trailers. In 2023 & 2024, Maillard was awarded Second Place in Kentucky Living Magazine’s Best Food Truck category. Most recently, we introduced our newest concept, Taglish Filipino American Kitchen, & along with Maillard, expanded into two brick & mortar food stalls in Elizabethtown.


In all our endeavors, we value fresh, local, & sustainable ingredients. Over the years, we have utilized various farmers markets, worked directly with farmers & artisans, & multiple small businesses. As fruitful as these collaborations have been, the challenge is obtaining items on a consistent basis while staying local.
